Cinnamon
Native to Sri Lanka, true cinnamon (Cinnamomum Zeylanicum), which is grown extensively in the Southern province of Sri Lanka. Cinnamon is used mostly in dessert dishes and common in many Middle Eastern and North African dishes, in flavoring lamb taglines or stuffed aubergines. It is used in curries and pilaus and in garam masala. It may be used to spice mulled wines, creams and syrup. Locally cinnamon is used to flavor curries and sweets. In Mexico, Sri Lankan cinnamon it is drunk with coffee and chocolate and brewed as a tea.
